
I almost forgot that it was St. Patrick's Day today...hard to believe huh since I'm married to an Irishman, but again it's not a holiday that is very widely celebrated in England. For me St. Paddy's Day is all about celebrating the Irish-ness of our family and a what a better way than to make some traditional Irish food for dinner. Since we've been to Ireland twice now and gotten a good taste for REAL Irish cuisine I thought would make something different than our traditional corned beef and cabbage this year. My favorite Irish dish ever was the Guinness Beef Stew and brown bread I got at Farrington's Pub in Temple Bar, Dublin and have been dying to find a recipe to recreate it. Kevin's mom, Sally, had bought me a Irish cookbook while were in Ireland together and it had a recipe for a Medieval Beef Stew with Stout and I hoped that would be the one. It turned out amazing!!!! I used real Irish beef for the stew and Kerrymade Irish butter for the bread. Both were better than what I remembered from Farrington's. I was so happy to be able to know that I can make this favorite dish any time...not just in Ireland or on St. Paddy's Day.
